Cajun Ragu Potot

with Naquins Fresh Cajun Sausage


Ingredients

  • 1 lb Naquins Fresh Cajun sausage, sliced
  • 4 large russet potatoes, cubed
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
Total Prep/Cook: 30 mins

Directions

  1. Brown the sliced Cajun sausage in a large cast iron pot over medium heat, then set aside.
  2. In the same pot, sauté the bell pepper, onion, and garlic until softened.
  3. Add the cubed potatoes, chicken broth, and Cajun seasoning to the pot. Season with salt and pepper to taste.
  4. Cover and simmer for 20-25 minutes or until potatoes are fork-tender.
  5. Stir in the browned sausage and cook for another 5 minutes to combine flavors. Serve hot!
