Cajun Ragu Potot
with Naquins Fresh Cajun Sausage
Ingredients
- 1 lb Naquins Fresh Cajun sausage, sliced
- 4 large russet potatoes, cubed
- 1 green bell pepper, diced
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 cup chicken broth
- 2 tsp Cajun seasoning
- Salt and pepper to taste

Directions
- Brown the sliced Cajun sausage in a large cast iron pot over medium heat, then set aside.
- In the same pot, sauté the bell pepper, onion, and garlic until softened.
- Add the cubed potatoes, chicken broth, and Cajun seasoning to the pot. Season with salt and pepper to taste.
- Cover and simmer for 20-25 minutes or until potatoes are fork-tender.
- Stir in the browned sausage and cook for another 5 minutes to combine flavors. Serve hot!
